WEDDING IN AUSTIN
Yesterday we went to a wedding in Austin. Jaime, 2nd daughter of Clair and Harold Eyer-great friends from Albuquerque, was married to Sean Johnson. It was a beautiful ceremony set in the country at a horse ranch. The wedding was @ 7pm and it was still hot - will I ever get used to Texas heat and humidity? But, the ceremony and the bride were beautiful.

PEANUT BUTTER COOKIES
Easiest cookies I ever made
My friend Sheila made these for our Bible Study Group on Monday. I changed the recipe from Sugar to Splenda and they did great. Great recipe for anyone with Flour allergies, Diabetics, etc.
EAST PEANUT BUTTER COOKIES
1 cup chunky peanut butter (may use smooth)
\1 cup Splenda OR ( 1 cup Sugar if you prefer sugar)
1 large egg
Mix all ingredients, drop by spoonfuls on greased cookie sheet, bake 12-15 min til golden brown at 375*, remove from oven, place choc chip or hersheys kiss on top, cool and ENJOY!!!!!!!!!!!!!!!!

FATHERS DAY TOY
MASON IS SUCH A HARD WORKER AND NOW HE HAS THIS GAS POWERED WEED EATER TO HELP HIM EDGE THE LAWNS. Here he is in his favorite hat and gardening shirt. He also received some money which I thought he was going to use to buy more plants but ended up almost completing his 007 collection in DVD's and VCR's. He also got a power drill. He doesn't say much, but he loves his new toys. Today after working on the yard, he drilled a screw to put up a new clock outside in the porch and then after a much deserved shower, sat and watched his latest James Bond movie (1 of 7 he bought). He is like the everready bunny, keeps on going til its time to take a nap and then the nap keeps on going- ha! I love my sweetie, he is so good and encouraging and a strong man of God.

ECLAIRS
I always 4X this recipe because they go so quickly!
1 stick butter and 1 c boiling water MELT TOGETHER
ADD 1 cup flour all at once BEAT TOGETHER TILL IT FORMS A BALL remove from heat
ADD 4 eggs one at a time WHIP TOGETHER TO MAKE A "CHOIX" PASTE
DROP BY TABLESPOONS ON A GREASED COOKIE SHEET (wet finger and spoon to let paste come out easily and push off spoon sideways to make a long oval) 1 inch apart and BAKE AT 400*-35-40 min TILL GOLDEN BROWN AND LIGHT AND HOLLOW. remove from sheet and slice at once to keep from sinking - if they are still doughy bake 5 min more. Let cool
FILLING Mix together:
1 CAN evaporated milk - not sweetened
1 pkg french vanilla pudding
opt: fold in 2 cups cool whip to make a "mousse" type filling
When shells are cool, fill with filling and drizzle choc frosting over top
frosting: mix together till smooth and sort of runny
3T butter
2 c powder sugar
1/2 cup cocoa or 1 cup melted choc chips
1 T vanilla
2T milk add a few more drops as needed to make it thin
REFRIGERATE OR FREEZE - THEY ARE GREAT COLD AND DON'T FREEZE HARD
Shells are great to stuff w/chicken salad, tuna salad, crab salad and are great at a luncheon. Shells also freeze well in a plastic bag or bin and last about 4 months

Fathers Day Weekend
This last weekend we went to Dallas area to celebrate Mason being a dad w/his kids: Trae and his fam in Keller (by Ft Worth) and Paige and her hubby Troy (Cedar Hills). We had a great time and we were blessed.

Roses and Peppers
Today our Joseph's Coat Roses bloomed and our habanero peppers exploded with tons of "fruit". We counted over 40 peppers - I don't know what we'll do with them - they are so firey hot!

Birthday Cakes
The 11th is Catherine's birthday which we celebrated today the 15th on Kelly's birthday because we were in Dalllas - so we traded birthdays Both girls got ice cream cakes this year. Catherine's was a chocolate cake with vanilla ice cream and chocolate frosting, and Kelly's was a lemon cake with strawberry ice cream and lemon creamcheese frosting with fresh strawberries.
